More for Less! Make a Deluxe 500-Calorie Dinner!

Sometimes it feels like you can’t win for losing.  Not only can it be difficult to eat right (since you’ve got to learn new recipes, techniques, etc…) but even if you do commit to giving yourself a diet overhaul, it’s often too expensive. 

I saw a segment on the Today show that demonstrated how easy it can be to make a three-course meal that is both low on cost and in calories (but, hopefully, not low on taste!).  The dinner includes a roasted natural beef tenderloin with balsamic marinated heirloom tomatoes, tomato-peach gazpacho and a juicy peach cobbler.  Sounds delicious!  Visit the Today show website for the recipe and check out the video below!
