I can’t even tell you how much I love eating pork and risotto. I only have pork once or twice a month but when I do, I have to have it with risotto. The Scotto family stopped by the Today show where they cooked the pork and risotto along with their Italian vegetable rollatina. Sounds delicious! For dessert, they whipped together a maple marscarpone with pine nuts.
