			<content:encoded><![CDATA[<p>Almost everyone loves Italian food but many don’t know much about the fare beyond your typical pizza and spaghetti so it was great that the <strong><em>Today</em></strong> show demonstrated how to make some authentic Italian dishes.</p>
<p>One meal they prepared was cavetelli with eggs and bacon which looked like a mix between a carbonara and a frittata.&#160;&#160; For dessert, they made a bread parfait.&#160; The bread is socked in espresso coffee, chocolate and rum and is then layered in a dessert glass with whipped cream.&#160; It’s a great way to get rid of leftover bread.&#160; It was so quick and easy!</p>

			<content:encoded><![CDATA[<p>I love being adventurous in the kitchen and when I’m low on food, I have to get creative to feed my family of five.&#160; Sometimes it comes out great and I’ve discovered a new meal to add to my repertoire and other times it’s a horrible disaster.&#160; </p>
<p>On the <strong><em>Today</em></strong> show, they listed the following kitchen staples: lemons, mayo, olive/peanut/sesame oil, butter, rice, pasta, onions, red pepper flakes, garlic, soy sauce, sugar, parmesan cheese and dried herbs.&#160; Of course, this is just a basic list of items that you should have on hand.&#160; If you wanted to make a specific dish, you would need to get those supplies.</p>
<p>For the set of meals prepared during the segment, they needed:&#160; bacon, chicken breast, Udon noodles, bread, shrimp, mushrooms, tomatoes, asparagus, ginger and spinach.&#160; The dishes they made included a delicious looking “bacon, spinach, bread crumb pasta.”&#160; I seriously want to make that tonight!</p>

<p><strong>Lidia Bastianich</strong> stopped by the <strong><em>Today</em></strong> show where she talked with host, <strong>Al Roker </strong>and made bucatini with homemade bread crumbs.&#160; I absolutely love pasta and I adore garlic so this recipe looks like something I would love (it looked like there was a little too much olive oil in there for me, though).&#160; The recipe calls for oregano and, while Lidia explains that she prefers fresh herbs, oregano is the exception because the dried version is more intense.&#160; I never noticed that!&#160; </p>

<p>It ended up being a very simple dish and Lidia suggested that viewers add whatever veggie they’d like if they want some added fiber (she threw in some spinach and that looked really good!).&#160; I think I’d either do that or a little bit of broccoli.&#160; Yum!</p>
